I keep seeing pictures of zucchini pasta on Instagram so I have been planning all week to make some of my own. After checking out Marshall’s, Home Goods and Target I was worried I would have to wait forever since I could not find a zucchini spiralizer to save my life (the guy at Target was really dumbfounded by the word spiralizer, ha). After getting creative, I realized you could make zucchini pasta with just a normal potato peeler, which would end up more like fettucini-like pasta but ultimately the same. Luckily I own a peeler so the Target guy was happy.
I couldn’t imagine eating zucchini pasta cold (even though I know it is suppose to be raw/non heated) so I chose to make each serving flash-heated in a pan so that the noodles would be warm before serving. The bf was VERY hesitant about liking this dish, but the more he ate it the more he enjoyed it and admitted that he liked it a lot more than he thought he would. Of course he thinks it was missing salmon on top, but we will try that next time. For now, plain old raw zucchini pasta…
Raw Zucchini Pasta (serves 2-4 depending how much you eat)
Pesto (this would also be good with a Marinara sauce)
Salt & Pepper
- Peel outside layer off zucchinis, discard. Peel thick strips of zucchini until you hit seeds (this part is weirdly fun for some reason). All seeded pieces should be thrown away.
- Heat up some olive oil in a pan and place a handful of tomatoes and sundried tomatoes in. Warm those up and then take two handfuls of zucchini noodles and place those on top, moving them around until the “noodles” feel warm to the touch. Add some salt and pepper.
- Remove all from pan and dump into your bowl.
- Add pesto and kalamata olives, toss together and enjoy!
I know this isn’t a “fully raw” meal, but the zucchini is raw and this is a much healthier alternative than your traditional starchy pasta noodle. You also feel surprisingly full afterwards like you ate actual pasta when all you ate was raw zucchini…so you are kind of like tricking your body into thinking it ate something bad. Next time I will try this with a marinara sauce and see how it comes out, maybe add in some mushrooms. If you try this let me know what you think!
